The Very Best Zucchini Bread

3 cups flour
1 tsp salt
1 tsp baking soda
1 tsp baking powder
3 tsp ground cinnamon
3 eggs
1 cup oil
2 1/4 cups white sugar
3 tsp vanilla extract
2 cups grated zucchini
1 cup choped nuts, optional

Grease and flour two 8 x 4 inch pans. Preheat oven to 325 degrees.

Sift flour, baking powder, soda and cinnammon together in a bowl.

Beat eggs, oil, vanilla and sugar together in a large bowl. Add sifted
ingredients to the creamed mixture and beat well. Stir in zucchini and nuts
until well combined. Pour batter into prepared pans.

Bake for 40 to 60 minutes or until tester inserted comes out clean. Cool in pan
or rack for 20 minutes. Remove bread from pan, and completely cool.

I went to the Hari Krishna Festival of Colors this weekend in Spanish Fork with some friends.
Apparently its some sect of Hinduism... or something... I can't remember I was trying really hard to listen to the shpiel but I got so excited for the chalk part! So there were like a thousand people of something like that and you buy colored powdered chalk ahead of time and after they burn this witch demon thingy in a big ol' fire everyone just starts throwing chalk everywhere! And there was this huge colorful cloud of beautiful awesomeness and you really couldn't see a whole lot or breathe a whole lot... so you know it was amazing! and then everybody just kind of danced around for a while... goodtimes... super fun! you should all come next year!

Holly and Heidi weren't planning on going to the Twirp (Morp/Sadie Hawkins) but when they helped decorate for the dance Friday night, they began to have second thoughts. After a few phone calls, a new dress, a borrowed dress (thanks Jessie!) and an in-house hairstylist, they were good to go.

There was just one hitch, neither one had a man! Hope there weren't too many upset dates!

Paige pulls it off!!!

All the schooling and hard work of learning the "ins and outs" of the cosmetology trade boiled down to a 7 hour testing period on Thursday, February 19th.

In case you had not heard, Paige passed the California State Boards to be a licensed cosmetologist in California last Thursday and I have posted a photo for all of you to prove it!

Paige, Holly and I arrived in Fairfield at about 10:30 pm Wednesday night because Paige and Holly (Paige's model) had to show up at the testing site at 6:00 a.m. It was an interesting and nerve wracking experience for all of us, but especially for Paige.

One of the funniest stories that has come from the ordeal is Holly's interpretation of the woman who was monitoring the 8 girls in the room Paige tested in. The first test was the practical. The models and candidates are given strict instructions to not speak during this time period because this is when the candidates prove they know the various procedures. The woman who was giving instructions in Paige's room had a very thick foreign accent. When she began to speak, Holly looked at Paige and telepathically inquired if she knew what the heck the woman was saying. It took every ounce of self control for them not to bust out laughing. Paige later admitted that she was focusing all her brain cells on solely trying to understand the instructions the woman was giving. Holly has since become proficient at sounding like the woman who gave the instructions and we get a good laugh every time.

After taking the practical, the candidates are required to take a written test where they are given 1 hour to complete it. Paige finished in 30 minutes and came out to the car to tell us that she was done. We waited another 30 minutes for the results of the exam -finally Paige emerged from the building with a smile on her face and her new license in her hand. We are all very proud of her - what's next for Paige???? Please submit your suggestions for the next segment of Paige's life in the comment section.

Well imagine my surprise when I spent a Sunday evening with the Cordners and the Jr.Jr. Jenkins families only to find that the family has a Jehamaco Blog!

I pondered for some time why an extremely interesting person such as myself, who also happens to be a very integral and treasured member of this family, would just now be discovering this well kept family secret.

Apparently certain more established members of this wonderfully extended family feel that those of us without, spouses, children, grand-children, nieces or nephews, school, jobs, girlfriends, pets, a permanent address, a full grasp on correct grammar... or delicious recipes have anything note worthy to add to this fantastic blog... and maybe they're right...

...all the same I feel like I have an obligation to inform the rest of you of what my family of 1 has been up to as of late...

...which is conveniently and quite accurately summed up in the picture posted here...

...so...yeah that's about it!

New Year's Eve in San Francisco

Well, Jayne asked for it and so here it is. We spent New Year's Eve day in San Francisco and Paige and Holly spent about 45 minutes of New Year's Eve making music down by Pier 39. As you'll see, the girls had a very vocal "fan" make her way over to them to listen to their songs. She had partaken of some adult beverages earlier and was "feeling the groove" as she coaxed and cajoled the crowd into tossing some money into their guitar case. . At one point you'll see her grab a drawing of Jimi Hendrix and wave it above her head while shouting "Obama!" We were just a few people out of the thousands who showed up in San Francisco to ring in the New Year that day and we had a blast - a New Year's Eve we'll never forget! By the way, when Paige and Holly totaled up the nickels, dimes, quarters and dollar bills, they had made about $25.00!

It's about time I joined the ranks of Jehamacoco-ing. Here's a lil' update on us and life in Daybreak, Utah.
First of all, it's getting cold. I don't know how I ever tolerated Rexburg. I guess now, it's feeling that much colder, because I've faced the fact that my freezing little toosh will be here for the rest of my life! yikes. But yeah, the autumn time was enjoyable and very beautiful. I guess I can look for beauty in the winter... maybe.
We are excited to be celebrating our first Christmas together. Thank goodness, Steve doesn't have to work Christmas day. He works Christmas Eve day but will be home the next morning. Dec. 24th through Jan. 1st are called "black out days" for firemen . So you have to work when you are scheduled, and you can't take your day off...unless you can find someone crazy enough to trade with you. (A little fire district enlightenment there for ya).
Steve's work has been good to him. Not any fires since this last summer, not too many drunk girls hitting on him, and no life threatening situations while he's been on the ambulance, so he's good. He loves every day he goes to work because of the possibility of something really cool happening. Poor guy, jk. He still loves it. On his days off you can find him on the computer updating our budget for the month, as he is (we are) diligently trying to knock out as much debt as we possibly can. He's gotten me hooked on recording and analyzing our expenditures. We get all psyched thinking about the day that we can finally escape the bondage of debt!
Work is going well for me. I love what I do, teaching has it's challenges, but I don't think I could be happier doing anything else. I love all those little, and not so little kids.
We are pleased to see all the excavators and loud tractors outside our house gone. For those of you who have seen, there has been tons of construction going on right outside our house, with a new road going in and a trax line ending almost at our doorstep. On the note of teaching, though, Daybreak has announced the building of a charter school opening fall '09. The location of which, is also going to be right behind our house! So, with the news of that, I've applied for a teaching position there. How could any one pass up the op. of working in their backyard? I've recieved word that they'll be reviewing applications in January. So far, things sound good...so we'll keep crossing our fingers.
Hmmm...anything else??? Steve and I are anticipating a laparoscopy comes February. Finally! We were scheduled to have it done a week ago, but good ole insurance won't cover me till I've been on with him for a year. I'll manage a few more months with the hope that all will be taken care of soon. Till then the hope of expanding our family remains dim, and we'll see how things go after that ;)
Married life in the Jensen household steadily remains a joy as we are inching closer to our year anniversary. It's awesome to have someone to face life with, to enjoy the little moments that make it great, and work with to overcome the obstacles that make it a challenge. He is my little soul mate, surely.
We look forward to our Cali trip. Never a dull moment in that Haven's household. And hopefully we can recruit a souvenir called "Paige" back up with us. We'll see.

Just a quick update from out here in Oklahoma. We are doing great. Jason is loving his job, and loving college football even more. Jack is a Star Wars fanatic and Nolan is just trying to dodge getting steamed rolled. I just got a job at a bookstore working a couple nights a week and am really enjoying it. One of the perks is that I can "check out" what ever book I want. (I know, pretty awesome!) We miss everyone and can't wait to check in on the blog!

Cordner Update

Thanks Lacey for getting this started. It's 4:40 pm - dinner is ready, kids are at various places and I had a few minutes of peace and thought that I would let you all in on how we are doing. This is a milestone for me. I probably will not post any pics until I have the courage to figure that out.

Ken is pretty busy even though his custom residential jobs are coming to an end. He is busy working with his partner trying to come up with commercial jobs. They are pursuing some leads - one is a big development (theater, restuarants, stores) out by the Smith's Food King in Saratoga Springs. We'll see what happens. Football coaching is over for the season. I think he is enjoying the break from practices and games 4 times a week.

I am busy with keeping the house clean for potential buyers. Those of you who didn't know - we have our home on the market. Ken has a spec home here in Alpine and we need to sell one of these homes. We have had a little traffic and just hope that something happens this winter even if it's the worst time to have your home up for sale.

McKenzie is busy trying to juggle, homework, swim team 2 hours a day, piano practicing, and social life. She loves swim team and she was recently released as Beehive President. She had a fun time doing that but is glad that there are no more meetings.

Mitchell's football team made it to the first round of playoffs. Ken is hoping that everybody on their team grows 7 inches and gains 20 pounds during the offseason. The joke is that Alpine men love their women small - because all the boys are small!!! - compared to American Fork and Pleasant Grove. He is coming along in scouts and his goal is to get his Eagle when he is 13. He is in the middle of completing 3 merit badges through BYU pow wow.

Mary Anna can be found listening to her ipod and dancing around in the kitchen. She loves music and singing - and she's good at it! She is busy this month writing a report on "painted turtles." She is an excellent student that makes her teacher very proud. She does everything right and her teacher couldn't think of one thing that she needs to work on. She is so helpful playing with Maddy and any other little girls that are hanging out at our house.

Matthew has become very interested in Playstation. He loves playing the football games and his "real" football team made it to the playoffs also but sadly, lost their first game. Matthew was such a great team player. There were lots of boys that when not playing, would run around and wrestle and goof off. Matthew always had his helmet on, watching the game, ready to go when his coach called his name. He worked hard and impressed his parents with his commitment and diligence.

Maddy loves kindergarten. She has so much fun with the 7 girls in her class and puts up with the other 16 boys. She is learning to read and does a great job. She is constantly coloring for homework and is learning to sound out words and spell them the way she thinks they are spelled. She was a snow princess for Halloween. We had way too much candy around our house.

Well, I must go - but will post later. It's so fun to look up blogs and see what is happening so thanks Lacey. Hopefully everybody will take part in this.
